barbecue lime salmon
we love this simple bbq lime salmon dish..especially during the summer! i first saw them as kebabs, but didn’t have skewers, so just ate it as a mix over arugula and we LOVED it! you could also keep the salmon in fillet size and serve that way. it’s a flexible dish but yummy combo!
20 oz wild caught salmon (4-5 fillets)
2 red bell peppers
1 onion (I prefer red here, but either works!)
1 TBS olive oil
sea salt and pepper to taste
1/2 cup bbq sauce
Juice of 1 lime
Fresh diced pineapple
Heat the grill to medium high. Remove skins from salmon and cut into one inch cubes. Slice peppers and onions and set aside.
If using a grill, place foil to replicate a rimmed baking sheet on grill. Otherwise, a stovetop grill works great to grill on. Spray with cooking spray and add salmon + veggies to the grill. Cook for 5 minutes, then pour/baste the BBQ lime sauce on top and then flip. Baste the other side and cook 5 more minutes. Grill pineapple alongside and serve together over quinoa or greens!
