Pesto pasta, two ways

These are two of our absolute staple dishes around here. I make them so often and don’t use a recipe, but finally writing them out to save and share!

Sweet pesto pasta
1 pound bowtie pasta (or any kind, or quinoa, etc)
2 cups cooked chicken, diced or shredded
1 cup pesto
1/2 cup dried cranberries
1/2 cup caramelized onions (I caramelize 1 red onion and use most)
1/2 cup parmesan cheese

Pesto and sundried tomato pesto pasta
1 lb whole wheat pasta (or cooked quinoa, any type of pasta)
1.5 cups pesto
3/4 cup sundried tomatoes (love them from a jar packed in oil but dried works)
1.5 cups cooked chicken
1/2 cup shredded parmesan
Salt and pepper
Pine nuts for garnish

Optional add ins: spinach (stir in while hot so it wilts) fresh cherry tomatoes
