Chia Seed Pudding Recipes

here are a few favorite combos for chia pudding – a fun and different breakfast to mix the night before, and wake up to! (or snack on later in the day :) i’m continuing to get all of my recipes out of drafts during this quarantine time!

basic banana chia pudding
1 banana, mashed
1 cup unsweetened almond milk
shake of cinnamon
pinch of salt
6 tablespoons chia seeds
{optional toppings: almond butter, sliced banana, berries, coconut, cacao nibs}

in a small bowl, mix together mashed banana, almond milk, cinnamon and salt until the banana is well combined. let sit overnight! mix well in the morning – top if desired, and enjoy!


chocolate chia pudding
1 1/2 cups unsweetened vanilla almond mik
1/3 cup chia seeds
1/4 cup cacao (or unsweetened cocoa powder)
2-5 TB pure maple syrup (or 5-8 pitted dates if you want to blend them in after it sets)
1 pinch sea salt
1/2 tsp vanilla extract
1/2 tsp ground cinnamon (optional)

combine all ingredients in a bowl and whisk really well to combine. cover and refrigerate overnight, or at least a few hours until it’s thickened.
again, at this point if you haven’t sweetened you can put it in the blender and add dates.

enjoy cold plain, or with fruit toppings or coconut whipped cream :) yum!


blueberry pistachio chia pudding
3/4 cup milk
1/4 cup chia seeds
1/4 cup pure maple syrup, divided
1/2 tsp vanilla extract
1 cup plain 2% yogurt
2 cups blueberries
1/4 cup chopped toasted pistachios


coconut chia pudding


6 ounces plain non-fat Greek yogurt
3/4 cup milk of choice
1 1/2 tablespoons honey
1/4 teaspoon coconut extract
pinch of salt
3 tablespoons chia seeds
Unsweetened toasted coconut flakes for topping the parfaits (optional)

In a large bowl whisk together the yogurt, milk, honey, coconut extract and pinch of salt until smooth. Add in the chia seeds and stir until evenly incorporated. Cover the bowl with plastic wrap or a lid and refrigerate at least 4 hours or overnight until the pudding is thick. Top with chia berry jam, toasted coconut flakes, nuts, anything you like!
