chocolate oatmeal cookie bars

this might be my new favorite dessert recipe on the site. i’m serious!
i made them last night for dinner with friends, and almost the entire pan was gone
in minutes. and, i may or may not be eating the little piece that was left right now at 9 AM…
in other words, this is a good recipe and you should probably make it A.S.A.P.
my mother-in-law makes this recipe all the time and it is SO good, but it had so much
butter that i always felt like i was taking days off my life when eating it. well, last
night i made it with coconut oil and changed up some ingredients, and it still tastes
the same but is 10x healthier! this is a perfect dessert to take to a party, or to make
at home and eat the entire pan yourself :) enjoy!
- 3/4 cup coconut oil {you can use butter if you don’t have coconut oil}
- 1.5 cups packed brown sugar
- 2 eggs
- 2 tsp. vanilla
- 1 7/8 cup flour (i know this measurement is random, but i experimented with all different amounts and this was perfect. basically just do a little less than 2 cups :)
- 3/4 tsp baking soda
- 3/4 tsp salt
- 2 1/4 cup oatmeal
- 3/4 cup semisweet chocolate chips
- 1 tbsp. coconut oil {can use butter}
- 1/2 can sweetened condensed milk {7 ounces}
- 1/4 tsp salt
- 1 tsp. vanilla
melt above ingredients together on stove or on microwave, just until melted. do not boil!
YUM!!!! I will definitely have to try these. :)

hi! yum..jealous you’ll be having these tonight! you can use either–we use regular, but it only changes how big the oats are– quick oats will be smaller pieces and make the texture a little lighter! hope you enjoy them! xo
