Sweetgreen has always been a favorite since living in Washington DC, and now we have lots around us!
I don’t go there enough where we live, because I love making my own salads at home so when I go out I don’t usually choose there. But – on vacation it’s always my favorite stop for some healthy, hearty good combos. At home, it’s my favorite to re-create some copycats because I love their combinations!
The Kale Caesar there is a favorite – it’s simple, but so much lighter than a classic caesar…and the squeeze of lime takes it next level! Also, the parmesan crisps of course :) I tried a few different copycat recipes, and this was my favorite -mostly just because of the dressing – it’s so much easier and lighter than others! I don’t think it’s that close to Sweetgreen’s dressing, but the salad as a whole has a similar taste and we love it.
I also am lazy and just buy the parm crisps because we have an amazing brand of them at our Costco (from Sonoma Creamery) but they can also be made at home!
2 cups parmesan crisps (or a bag parmesan cheese to bake to a crisp!)
1 head curly kale – or the bag at Trader Joe’s
Romaine or other green to mix with kale if wanted!
Lime wedges *essential!
Roasted chicken, cut into small chunks
1 clove minced garlic
1 Tablespoon Dijon mustard
1 Tablespoon raw honey
1 Tablespoon lime juice (can sub lemon juice)
Salt and pepper
1/3 cup extra virgin olive oil
- Wash the kale, and trim into fine pieces off the stalks. Cut romaine or other green into small pieces if using.
- For dressing: add the garlic, Dijon, honey, lemon juice, salt and pepper to a mason jar. Shake well. Add olive oil and shake again. Taste for seasoning,
- To a salad bowl: add the kale, romaine, chicken, and Parmesan crisps. Add about half of the dressing. Toss really well, and add more dressing if needed. It is best to err on the side of more dressing with this kind of kale, and let it sit tossed for a short time to let it soak in.
- Serve with lime wedges and squeeze generously over the salad!!Happy Caesar Kale-ing!
