3-ingredient blender pancakes

We love these simple pancakes with healthy ingredients!
You’d never guess they turn into pancakes, but they are packed with protein
from the cottage cheese and eggs. Just throw these 3 ingredients in the blender,
then pour the batter onto a griddle just like regular pancakes.


  • 1 cup cottage cheese
  • 1 cup rolled oats (uncooked)
  • 6 eggs

    Blend well until it’s a smooth batter, top with fruit,
    pure maple syrup, almond butter, anything!
    This amount will feed 3-4 people.

    *Once you’ve made them enough, you can start to experiment with mix-ins in the batter. We often add a banana, vanilla protein powder, cinnamon and apples, the options are endless! Protein is really important to us so I try to include protein powder in lots of different recipes. I like to pack these pancakes with protein and put lots of berries on top.
    They are still great plain though!


    **To make the WAFFLES version, just double the cottage cheese and oat amounts but keep eggs the same!**

6 large eggs
2 cups of cottage cheese
2 cups old fashioned oats
1/2 teaspoon vanilla extract

Blend and cook in waffle iron!!

Lastly, here is how to make CHAFFLES which are low carb waffles made with just cheese and eggs!

1 large egg mixed with 1/2 cup finely shredded mozzarella

Whisk to combine, pour into waffle iron and until cooked and crispy!

Serve warm with butter and syrup, or nut butter, anything you want!

* You can also add a splash of vanilla or dash of cinnamon to sweeten up, or add bacon crumbles / ham with black pepper to make savory!
